The Dyfi Distillery at the Corris Craft Centre has released its highly anticipated Hibernation Gin. While still drawing heavily upon ingredients foraged in the local UNESCO Biosphere Reserve, this is believed to be the world’s first gin aged in a 100-year old White Port barrel.
Co-founder and distiller Pete Cameron commented, “barrel-aged gin is not new, but is gaining in popularity. What we wanted to do with Hibernation Gin was produce something with not only a unique and local botanical influence, but also use a barrel type which is completely new to gin. The results are fascinating.”
The rarity of the barrel means that Hibernation Gin will be a very limited release, even by this distillery’s standards. It is available via www.dyfidistillery.com, at the distillery shop in the Corris Craft Centre from April 1st, and limited allocations will be stocked nationally by luxury department stores and fine wine and spirit merchants.
The release completes a remarkable first year for the Dyfi Distillery, which has been called “a sleeping dragon waiting to be discovered” by the highly regarded GinFoundry, and whose Pollination Gin has been referenced by another distiller as, “the best gin in the world” and by a high profile spirits commentator as, “the finest gin nose I’ve ever encountered.” Pollination Gin is stocked by Selfridges and Fortnum & Mason, and several Michelin-starred restaurants around the UK.
